Recipe 1: The dough fought back.

The first batch was harder to knead, and the crumb came out somewhat dry instead of soft and chewy. Adding flour to make kneading easier can leave the dough too dry. A little tackiness is fine.

Ingredients

  • 420 g bread flour
  • 120 g all-purpose flour total: about 60 g in the dough, with up to 60 g originally intended for kneading
  • 100 g sugar
  • 240 g milk
  • 2 eggs, about 100 g
  • 8 g instant yeast
  • 57 g butter
  • 12 g salt
  • Breadcrumbs

What I learned

Avoid adding flour just to make the dough feel dry. Slightly tacky is preferable.
